The Flores family also prioritises protecting their ecosystem, favouring compost over fertiliser to improve their soil conditions.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTHE PROCESS\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eThis coffee goes through a traditional natural process. Cherries are picked and laid on raised beds to dry. Natural sugars from the mucilage inside the cherries slowly ferment to produce the sweetness and dense body that natural coffees are known for.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eWHY WE CHOSE THIS COFFEE\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eWe believe the Marshell varietal is a reflection of both quality and the Peruvian terroir. Not only is it highly resistant to coffee leaf rust, but it also won the 2019 Peru COE, surpassing the Gesha. True to coffees from the Cajamarca region, Marshell has a deep rich sweetness with prominent acidity.
