The Flores family also prioritises protecting their ecosystem, favouring compost over fertiliser to improve their soil conditions.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTHE PROCESS\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eCherries are picked and fermented for 8-12H. After mechanical depulping, cherries are rinsed of their mucilage and dried on raised beds.
