Our "CLASSIC" coffees this month comes from the Danche washing station, located in the Gedeb region of Ethiopia! This is an insanely delicious coffee & we're so excited to share this with you!
Danche buys from 400 different smallholder farmers who each typically owns 1-2 hectares of land that they use to grow cash crops, coffee being one of them. The washing station is located around 2000MASL, & this suggests that the coffee cherries growing in that region takes a longer time to mature & ripen, increasing the sweetness as well as its complexity.
This is a "CLASSIC" natural or dry process, where coffees are left to dry within its cherry. As traditional as it may be, over the years the most important improvements have come from the focus on ripe picking as well as the introduction of raised African beds for the drying process. This has led to tremendous improvement in terms of cup quality.
Danche Natural is incredibly sweet, with loads of cooked fruits & florals dominating the taste experience. We love the mouthfeel, a good balance of intensity yet elegant! We hope you will enjoy this coffee as much as we do!
