In the misty highlands of Marcala, where coffee trees climb volcanic slopes under the watch of banana and avocado shade, the Caballero family has spent three generations perfecting the art of Honduran coffee. Marysabel Caballero and Moisés Herrera, names we are all very familiar with, pioneered natural processing here, adapting it to the region’s humidity with covered raised beds and patient drying.
Their Bomba de Fruta #4 begins with handpicked Catuai cherries, dried whole under careful shade to coax out depth without overpowering the bean’s inherent brightness. The result is a coffee that balances Marcala’s terroir with thoughtful craft – dark chocolate richness melds with crisp mulberry acidity, while a whisper of winter melon freshness keeps it lively.
We chose this lot for how it embodies the Caballeros’ philosophy—respecting tradition while daring to innovate. It’s a natural processed coffee that feels both familiar and exciting.
