Antioquia offers a distinct flavour profile of Colombian coffees that we feel is unique to that microclimate. With relatively high elevations & humidity, it was traditionally difficult to produce natural coffees. Juan Saldarriaga is a producer we’ve encountered who has been able to overcome these challenges with innovations at his farms.
In the last few years, he has developed a mechanical dryer that has helped tremendously in the drying process. By controlling the temperature in the dryer, he is able to also simultaneously extend the fermentation whilst slowly drying the coffees to the desired moisture level.
This coffee is a mixed lot of Caturra from both of his farms, El Encanto & La Claudina. This fruit bomb is incredibly sweet & sticky with tropical notes of pineapples as well as dried mangoes! We hope you will enjoy this coffee as much as we do!
