This region is known for producing highly aromatic and complex coffees \u0026amp; it has fast become one of our favourites. Chelchele serves over 300 smallholder farmers, mostly growing choice varieties like Kurume, Wolisho, Dega \u0026amp; 74110. \u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTHE PROCESS\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eThis coffee underwent a “CLASSIC” fully washed protocol by Ethiopian standards; ripe \u0026amp; sorted cherries are depulped before being fermented underwater. At higher elevations, fermentation times can be as long as 72H. The coffees are then rinsed \u0026amp; dried slowly on raised beds for up to 25 days. \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eWHY WE CHOSE THIS COFFEE\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eThis is our 2nd year featuring Chelchele, after a natural processed lot won our hearts last year. In spite of our focus showcasing cultivars, Ethiopia is unique where most lots are a mix of at least 3 to 4 heirloom varieties.
