We’re truly humbled to be able to showcase this unique coffee from the Prieto Soto brothers for the 2nd year running. Villa Clabelina has been growing coffee for the last 50 years & grow mostly Caturras as well as Variedad Colombias. Due to the humid microclimate in the Antioquia region of Colombia, producers have shied away from experimenting with fermentation & drying techniques. Coffees from Antioquia have developed a reputation for solid yet safe flavour profiles.

The Prieto brothers belong to a Grower’s group, led by Juan Luis Saldarriaga. Last month we showcased a coffee from El Encanto, a juicy tropical-like coffee from the same region as Villa Clabelina. Juan has encouraged fellow producers and helped them with drying techniques that allow them to explore the different fermentation & drying techniques.

This lot was fermented in tanks as whole cherries for 24 hours, before being dried in Guardiolas. These machines are essential in creating a low yet stable temperature that allows the rate of drying to slow down, creating a rich yet clean mouthfeel. The whole cherry fermentation has created ripe fruit notes, most notably apricots with a floral tinge. Overall, this is such a sweet & luscious coffee. Brew Guide

15g of ground coffee at medium setting.
93 degrees Celsius water.

Pour ground coffee onto a pre-washed paper filter. Tap the sides of the dripper to evenly distribute the bed.

We recommend using a slow and steady stream of water when pouring!

Start the timer, pour up to 80g.
At 0:35, pour up to 150g, in a circular motion, not forgetting to wash down the high and dry grounds present at the sides of the paper filter.
At 1:05, pour up to 230g.
At 1:40, pour up to 265g.

Wait for the water to drain down, remove the dripper and enjoy your coffee.
