AB KARIMIKUI #135
LIVELY ACIDITY, CORDIAL SWEETNESS, SYRUPY

CUPPING NOTES: Lemonade, Blueberry Tea, Red Grape, Hibiscus, Envy Apple
VARIETAL: SL28, SL34, RUIRU 11, BATIAN
ORIGIN: Kirinyaga, Kenya
WASHING STATION: Karimikui
PRODUCER: Rungeto Farmers’ Cooperative Society

PROCESSING: Pulped, dry fermented 18-24hrs, rinsing intervals of 6-8 hours & dried on hessian mesh mats for one day, then moved to the traditional drying tables lined with jute cloth or shade net layered over the table’s wire mesh for 12 to 20 days depending on weather and rainfall.

We welcome our 2nd Kenyan coffee of the 2022 harvest, from a Washing Station we featured last year, Karimikui! We were super impressed with the beautiful flavours from this washing station, with notable berries, stone fruit & underlying florals. 

Karimikui belongs to Rungeto Farmers Cooperative, which owns a few more quality washing stations. Coffees from Kirinyaga are slightly different, with softer fruits as opposed to the intense juicier coffees from Nyeri. This coffee was graded as “AB”, which still allows for an even sorting between the bean sizes ensuring an even roast. 

Coffees from Kenya now mostly have the Ruiru 11 and Batian varieties in the mix. This has largely changed the characteristics of most Kenyan lots, but we believe the best ones still retain the classic characteristics with added complexity from the other varieties. 

Karimikui is laden with lively acidity, thick cordial sweetness and it leaves the mouth with a syrupy finish. This is an incredible coffee we can drink every single day & we hope you will enjoy this coffee as much as we do!

AQUIARES ESTATE ESPERANZA HONEY

PROCESSING: Pulped leaving 80-90% of mucilage, pre drying on concrete patios for 2 days then dried on african raised beds for 12-16 days

Our 4th Year showcasing coffees from Aquiares Estate & we’re excited to share this super sweet coffee that we’ve been itching to get our hands on! This honey-processed Esperanza falls under our “MODERN” category, where producers go beyond tradition to explore the boundaries of coffee’s taste experience.

Aquiares Estate is one of the largest farms in Costa Rica & a large part of the land is also dedicated to the sustainable ecosystem. Allowing the coffee trees to grow in that environment is beneficial to quality & that has been proven at Aquiares Estate. Their post harvest management also circles around this concept where lesser waste is produced & discarded. On top of that, Diego & his team focuses on cultivars that are robust yet possess the potential for high quality. The Esperanza variety is one of them, a Caturra & Ethiopian hybrid. This combination was chosen for its genetic distance, which ensures lesser chance for susceptibility to diseases. 

The Honey process has become a signature for Costa Rican coffee. Their climate permits an even drying, without having too high of a day temperature. At Aquiares Estate, coffees are dried in 2 stages. After the cherries are pulped leaving only the mucilage, they are laid on the covered ground for a pre-drying for a few days before being moved to raised beds. This slow drying allows for gentler flavours to develop as well as ensuring longevity for the green coffee’s freshness. 

Honey processed coffees are sensitive to high heat, so we were very careful when roasting this coffee to apply a gentler heat to ensure no scorched bean surfaces. Our Single Profile philosophy brings over a ripe acidity with a full mouthfeel and an intense sugary sweetness. We hope you will enjoy this coffee as much as we do!

MANANTIALES PINK BOURBON

Our “EXPERIMENTAL” showcase this month comes from a farm we are very familiar with in Valle Del Cauca, Manantiales Del Frontino! This time with a highly sought after natural mutation of the Bourbon varietal, the Pink Bourbon!

The Pink Bourbon was first found in Colombia. While the coffee plant retained most of its usual characteristics, the cherries ripened to a vibrant and deep pink instead of the usual bright red!

The growing conditions in Manantiales have shown to be beneficial to the cultivation of this varietal and its unique taste characteristics. Growing it under shade and amongst dense, natural flora pushes forward this varietal’s big and full mouthfeel with deep and sweet fruit flavours . This particular lot was fermented underwater semi anaerobic for 60hrs before being pulped, rinsed & slow dried to showcase a high flavour clarity.

This coffee has a big and full mouthfeel, characteristic of this varietal. While the careful rinsing and drying of this coffee pushes clear and distinct sweet, fruit flavour. An easy and satisfying cup for anytime of the day! We hope you will enjoy this coffee as much as we do!
