This coffee was sourced by Creativa Coffee District, a specialty coffee producer whose goal is to transform the traditional wet mill & drying patio model in Panama into a state-of-the-art processing facility.

Inspired by Colombia’s La Palma Y El Tucan’s Neighbours & Crops program, CCD has developed cooperating relationships with neighbouring producers to control & push the boundaries of coffee processing in the Hornito, Renacimiento & Boquete region of Panama. The farms that they work with are situated between 1300 to 1800MASL.

This lot comes from Finca Entre Rios, owned by David Cordoba. Finca Entre Rios is situated at 1440MASL in the Renacimiento region, growing Caturra & Yellow Catuai varieties. David saw the opportunity to join CCD, which gives him the pride to be recognised as a small producer focused on high-quality coffees.

With strict quality control in picking, ripe cherries are delivered to the wet mill in Cochea where it is fermented in an anaerobic environment for 48 hours before being dried on the patio for 10 days.

With our roast approach, this coffee is an explosion of red & yellow fruits; reminding us of strawberries,  tropical fruit as well as a touch of chardonnay. We love the juicy mouthfeel that complements the flavour experience.

This coffee is a very limited lot, so grab it quick before it’s gone!

Brew Guide

15g of ground coffee at medium setting.
93 degrees Celsius water.

Pour ground coffee onto a pre-washed paper filter. Tap the sides of the dripper to evenly distribute the bed.

We recommend using a slow and steady stream of water when pouring!

Start the timer, pour up to 80g.
At 0:35, pour up to 150g, in a circular motion, not forgetting to wash down the high and dry grounds present at the sides of the paper filter.
At 1:05, pour up to 200g.
At 1:40, pour up to 240g.
At 2:05, pour up to 270g.

Wait for the water to drain down, remove the dripper and enjoy your coffee.
