El Carmen is located at 1300MASL in the Apaneca-Ilamatepec region of El Salvador & is owned by the Alfaro family. Founded by Antonio Jose Alfaro in the 19th Century, it is now run by 4th generation producer Fernando Alfaro. 

The estate grows their coffee plants under the cover of shade trees, which plays a huge role in not only protecting the plants from the harsh heat, but also value adding to the soil health as well as the wildlife ecosystem. All lots from the estate are clearly marked & segregated upon harvest, ensuring full transparency. 

This lot is made of the Pacamara variety, a cross-breed between Pacas & the elephant bean Maragogype. Ripe cherries are soaked in water to clean them as well as remove any unripe cherries that will inevitably float to the surface. They are then placed in plastic barrels & sealed, creating an anaerobic environment to allow a slow fermentation process for about 96-120 hours. Once the cherries reach the desired PH levels, they are removed and sent to dry on African beds for 21 days, where the coffees are regularly raked to ensure even drying. 

What caught our attention the most was the smooth acidity as well as the rich mouthfeel of this coffee, which we believe comes from the extensive fermentation process. The taste experience is layered with notes of berries & peaches, ending with a clean refined sweetness. We hope you’ll enjoy this coffee as much as we do!
