This coffee was sourced by the good people at Nordic Approach.
Produced by Ruben Parra who comes from 3 generations of coffee farmers, this coffee is a classic showcase of a high quality coffees that have been coming out of the Tolima region of Colombia. The coffees are usually harvest from August to October in 3 to 4 passes which increases the manual labour requirements especially at an altitude of 1980MASL, but the results have been extremely worth it. Ruben grows Castillo, Variedad Colombia & Caturra trees in his farm and uses a typical dry fermentation and rinse before drying in parabolic dryers.
We picked this coffee for its upfront structured acidity & its remarkable mouthfeel. We love how creamy it is as well as its densely packed flavours of white grapes & cane sugar. The coffee also possesses an understated elegance that passes off as a good mix of floral & herbal notes.
