The Caturra variety has sustained Aquiares Estate for decades, despite all the challenges. This is the first year they are producing classic naturals with their Caturras. They’ve developed a system to “pre-dry” cherries on concrete in their greenhouses for 2-3 days, before moving them onto the raised beds for a slow drying phase which can take up to 25 days. The rate of drying is extremely important, to ensure a clean fermentation can occur for longer hours, which will showcase the varietal & origin characteristic in a more distinct fashion, rather than a generic “Dry Process” taste. Expect a smooth acidity & creamy mouthfeel with notes of merlot & macadamia milk.
